Calorie Advice Needed, please!

I'm 5'3" & 150lbs TRYING to lose 20lbs, but in no particular time frame. I've been at this for a month & have lost 10lbs.
I walk 2-3 miles per day, I'm doing the 30DS & besides that I try to add an extra 10-30 min of Cardio at least every other day. I started off at 1200 calories per day, not always eating them back & I feel I was far from starving myself since I was eating regularly, drinking my 8-10 glasses of water a day, getting my dairy, protein, fruits & veggies etc. I am noticing that I am shrinking so I am losing inches but the scale doesn't budge & if it does, it is to go UP!:mad:

I want this new lifestyle to work on a permanent basis so I am trying not to pay attention to the scale. But I was wondering if you "veterans" have any suggestions or advice on how I should proceed. I am starting to think I may be eating too much bread & cereal (wheat & cherrios or trix) or maybe not eating enough? I eat tons of bananas, salad, & things that are good for me but I'm always willing to take advice, suggestions, etc. Please help!! Thanks a bunch! I am deathly afraid of overdoing my calorie intake which is FUNNY since I never gave it a second thought about 6 weeks ago.
