Banana Pancake PB Sandwiches!

OMG! I made the easiest pancakes last night! Two major ingredients - 1 Banana & 2 Eggs. Mash together and griddle as you would pancakes (key is to make them small for popping into the mouth). I added more spices to taste such as sweetener, dark cocoa powder, cinnamon and vanilla extract. They were really good but filling so I saved half of them. Today I took out the cold pancakes, spread a tiny bit of peanut butter on them and pressed together as sandwiches. YUM!!! I'm going to make another batch specifically for that purpose next time.
