Tofu and Veggie Frittata
I just made a yummy frittata/souffle that is low in calories and very tasty. No oil, no butter, no cheese- just good stuff!
1 tbsp chopped fresh green bell pepper
1 tbsp chopped fresh red pepper
1 tbsp chopped red onion
1.5 oz extra firm tofu, cut into small cubes
1/4 cup egg substitute carton (or egg whites in a carton)
1 tsp hot sauce to taste
Chop veggies and tofu and place in a ramekin or 2 depending on the size. Sprinkle with hot sauce. Pour eggs over top and bake uncovered at 370 degrees for about 20-25 minutes until eggs are fluffly and rise.
