Egg Stuffed Portabella Mushrooms

After reading the Pizza Portabella recipe I wanted to make one last night. Unfortunately the store by my house was out of them. I wasn't driving across town to get them so I had something else. But I was still in the mood for mushrooms today and my wife and I were having breakfast for dinner (brinner). Here is what I came up with:

2 Portabella mushroom caps
3 Eggs
1 Laughing cow wedge
Onion
Tomato
Salt and Pepper

Preheat oven to 350
Clean the mushrooms, and remove the stem and gills. Salt and pepper to taste, split one wedge of laughing cow cheese between the two. Spread the cheese on the inside of each mushroom. Crack your eggs and pour into mushrooms (typically there is one large and one small portabella). Add diced onions or any other veggies you want. Bake in oven for 35 minutes. When done, pull it out cover with tomato, and I drizzled sriracha on top. Very good and very filling.

A nice way to reduce calories from the english muffin I normally put under my eggs.
