ok so i am tossing the idea around of going vegan again. i was for a bit maybe around 5 or 6 years ago, but had gotten really sick from a mixture of things. i would love to hear from any vegans on here about how your health has been and how long you have been dairy and egg free for. i already use coconut milk instead of regular, and i don't purchase stuff tested on animals to begin with (i am crazy ocd with researching that stuff lol). so yeah, if anyone has open diaries that are vegan i'd love to stalk your meals. i had an okay time finding good things to eat but i'd love to get an idea of what others are eating as well.
**and please, no preaching on why being vegan is good or bad, stupid, whatever the case may be. i don't care, that is not what i am asking. just would like to take a peak and see what people are munching on throughout the day to get some new good ideas. thank you ahead of time.
ps i am already a vegetarian so i have options and meals already, but i'm just trying to get back to that next step again.

I have been totally vegan for a week now (before, I was vegetarian for over a year with a few stints of veganism). I don't really eat any processed vegan foods (like imitation meats, dairy products, etc). I eat clean -- try to stick to whole foods as much as possible. I do supplement my diet with a scoop of vegan protein powder (right now I'm using Plantfusion but I'm going to try Sunwarrior next) in a green smoothie once a day. I eat a lot of raw and steamed vegetables, quinoa, fresh amd frozen fruit, avocado, sweet potatoes, oatmeal, edamame, some tofu/tempeh, and a limited amount of nuts and beans. Since I'm currently trying to lose weight (gained 20 lbs after a bad patch where I was basically a junk food vegetarian) I usually eat PB2 instead of peanut or almond butter. This has been the first week since I started a new job back in September that I haven't fallen victim to cake/cookies/treats in the break room! I feel great, plenty of energy. My skin is also clearer and I feel lighter (haven't weighed myself yet). Feel free to friend me and you can check out my diary.0

I'm vegan, though I just started using MyFitnessPal again after a loooooong break. You are welcome to follow/friend me. I am not that great of a cook, but I will try and post pics/recipes of the things I make and eat. Like the person to replied before me, I eat a lot of clean, unprocessed vegan foods. The very odd time we'll have a vegan mock meat, but it's not a daily (or even weekly) treat. I take vegetarian multivitamins, but other than that, I don't take anything and don't use protein powders or anything like that (I don't believe in them). Fresh and dried fruits are my favourite to eat followed by vegetables.
[edit]: Forgot to say, I've been vegetarian since I was 13 (on and off until I was 20 when I moved out). I was vegan for a few months in 2008, then for 2 years from 2008-2011. I stopped because I got reeeeally lazy with my cooking (and gained a bunch of weight as a result). I was a lazy vegan after that because I didn't like eating dairy or eggs, but was too lazy about all the convenience food I'd buy and eat. I went full vegan again feb 1 of this year and plan on staying vegan for good. In terms of health, I had always had iron problems, but they went away after I became vegan (crazy, right?). I started having B12 problems only because I wasn't getting enough in my diet (not paying attention). I took B12 supplements for a while, then switched to a multivitamin and have been perfectly fine since.0 -
I've been Vegan since Mid September, I don't always log, but I'm trying to now that I have my internet sorted.
Please ignore the salad cream which I have listed, I bought it before I was vegan & have nearly used it all up.
I'm trying to make more things myself instead of buying ready made.0 -
Why not look at what you already eat, identify what is not vegan, and consider what else you like that could take its place?
For example, if you have a yeast extract ricecake with cottage cheese, what would you enjoy instead? Peanut butter? Mashed avocado with a couple of slices of tomato on the top?
Some of my meals are vegan. Not necessarily by conscious decision, but just because it's something I would like on that day. For example, this evening, I had some potatoes, garlic, spices and some cavolo nero kale stirfried together.
It's easier, I think, to eat things because you like them, rather than eat them because you don't want to eat what you would normally enjoy. It doesn't feel like you're giving something up that way.

I've been vegan for over three years, and I would say that other than being slightly overweight my health has been very good. I've found that my digestive health is certainly much better if nothing else! The weight gain has nothing to do with veganism, just poor self-control and snacking. Anyway, I tend to eat a lot of beans, veggies and tofu. I cook a lot of the food I eat from scratch, but if I'm making a recipe from a cookbook or blog I try to cite the source. What problems did you have when you tried it before? If you can identify those issues and find ways to deal with them from the start, you'll be better off. What sorts of foods do you eat now?
I've been vegan for around 7 years and have experienced no known health issues. I make an effort to eat mostly healthy foods and take my vitamins. I can say with confidence that I will eat this way for the rest of my life. My diary is public, and you're welcome to take a peek if you'd like. I'm not perfect (I know I eat too much sugar), but I think I make pretty good choices overall.0 -
Ok, for breakfast I cut a potato and nuke it
Cut garlic, onion, pepper,the cooked potato, carrot, and some vegetable like artichoke hearts, brussel sprouts, etc
Put all in frying pan, brown a bit with EVOO, then add water
I use a chicken Herb Ox boullion cube for flavor.
Near the end I add a tbsp of cornstarch disolved in water.
It is a huge bowl that really fills me up.
Snacks, apples, rice cakes, even another baked potato.
For me, baked potato is better than pasta or rice or quinoa, even of the same calories for losing weight.
I am mostly vegan, but if I am out, a bit of meat is fine if I am visiting someone. Vegan is a choice, not religion, so I am not fanatic.
Just do what feels good. Oh, I buy shrimp because I have enlarged thyroid and do not eat salt or seaweed (other sources of iodine>)0
