I had a great version of scrambled eggs! I suppose it would be considered Italian.
2 eggs
1 cup baby Spinach
1 clove garlic (minced)
1/4 cup pasta sauce
1 piece light string cheese
1 Sandwich thin roll.
Spray your skillet. Saute baby spinach and garlic on low heat. Beat the eggs. You can either beat the pasta sauce with the eggs, or you can choose to add it on top at the end. Once spinach is wilted add eggs to the skillet. Cut your string cheese into many pieces. Scramble eggs and add string cheese pieces allowing them to melt. Serve with toasted sandwich roll.
Its delicious! 4 food groups, 335 calories and 25 grams of protein!
