Pizza cheese vs shredded asiago cheese

We are going to Old Chicago tomorrow night and I am trying to decide what to eat. They have a wonderful nutrtional data calculation tool. What is the difference in pizza cheese and shredded asiago cheese. If I have both the calories are 688, just pizza cheese it's 605 but the shredded asiago cheese only it's down to 472. How different will the taste be with just the asiago cheese?

Mozarella and asiago are completely different cheeses
Mozarella is a mild cheese whereas asiago is an older cheese and has a bolder flavour. Some people use asiago in the same way you would use parmigianno, which is sparingly, and mozarella is kind of an all purpose cheese.
If you're really a cheese fan, go for the asiago; in my opinion it has a better taste than mozarella.

Asiago is delicious! (though if I had to guess, I would say the sodium is probably quite a bit higher...in case you're counting that sort of thing)0

Thanks, I like knowing that I don't have to eat just one piece of pizza and since no one else in my family like what I eat I order the individual pizza. They have the new tavern style now, am anxious to see how that is.0

Pizza cheese is a blend, usually mozzarella with provolone although there's no real recipe. So pizza cheese is the melty, stringy goodness and asiago is the nutty aromatic goodness. You can always ask for half the usual pizza cheese, as so many places put on too much.0
