Vegan Mushroom and Leek Soup (146 cals)

Ingredients:

2 organic Leeks
2 cups of mushrooms
1 cup unsweetened almond milk
2 tbs nutritional yeast

Instructions:

Slice the mushrooms and the leeks
Heat a pan on med-high heat
Add in 1/4 cup of water and the nutritional yeast and let simmer
add in the mushrooms and the leeks and let them sauté in the nutritional yeast liquid
lower the heat to medium and stir until the leeks and mushrooms are cooked through
pour the almond milk into a high power blender (Vitamix is best) and then add the cooked mixture, but leave a little for garnishing
Blend on high (soup dial on vitamix) until you get a smooth consistency
Pour in a bowl and add the rest of the cooked mixture on top as garnish
Yum! ENJOY!
