Hey guys! I need help. I am sick of eating plain grilled chicken. Please give me some suggestions on different meats or different ways to prepare chicken that would be quick, easy, and filling. (I am also open to meat substitutes...I made great portobello mushroom sandwiches the other day) I am at a standstill and I need to lose...

Thanks!

    Hey there,
I try making my own "protein style burgers" with extra extra lean ground beef or you can use ground turkey as well. Cooked in a George Forman grill so it removes the excees fat. They I cut up onions, tomatoe and wrap in lettuse with some spicy mustard on it. It's really really good and saves me from going and getting a burger.
You should also buy some tuna and albacore in water. They are both full of protein and not much fat. I mix with a little mustard, some onions and eat it over spinach.
    Hope this helps.

I'm sort of in the same boat, only I'm allergic to chicken and I'm very bored with food...I do use a lot of Turkey, it's just difficult finding fresh turkey breast at my super market options. I did find last night, pre-cooked/pre-seasoned Turkey Breast in the meat department at Wal-Mart. I bought 1, just to try it and I loved it. I took it home and cut it all up into cubes, and then I weighed it out into servings so I would know that this serving cup has 140 calories of Turkey. worked quite well!!!

I don't have much time to cook dinner, so I like buying morning star veggie burgers. I cook them and eat them with hummus and whole wheat english muffin. They are way too good to be vegetarian, and I'm a steak lover.

I love marinated grilled tofu, although texturally it's not everyones cup of tea. How about a veggie burger? They are high in protein and much lower in calories and fat than hamburger. Check packages though as some are high in sodium

One great protein is soybeans, or shelled edamame. For 2/3 cup you get 10 g. of protein, calories 110, fat 3 g., fiber 8 g., no cholesterol, less than 5mg of sodium. Its great to toss in a salad, or with some wild rice.
  • Any meat can be fine as long as you get the lean stuff and don't saturate it in sauces. I bought some frozen ahi tuna the other day, thawed it out, lightly brushed with olive oil, then just sprinkled it with garlic power, onion salt, and black pepper. Threw it on the grill it was great.

Morning Star makes a ton of meat replacements that are awesome! "Chicken" Patties, ground beef replacement, burgers, bacon, & corn dogs are all really good. My boyfriend likes the "chicken" and "steak" strips but I'm not a big fan of those. We both didn't like the sausage. The texture was just not right.

Lean steak is great stir fried, or turkey/chicken stir fried. Add a little chilli, oyster sauce and a drop of sesame oil. Is yummy. Or just add greek yoghurt with mint in to chicken.

My husband is not a big fan of poultry of any sort. Some of the other options.

    Pork Tenderloin - 3oz around 122 calories
Cut it into medallions and have tenderloin pork chops; marinated and on the grill is wonderful. I try to buy large ones, then butcher them down into 1, 2 and 3 serving size pieces and freeze what I'm not using.

    Salmon - 3oz, 175 calories
Lemon and olive oil, tossed on the grill or baked

    Bison 3oz ground 152 calories
The ultimate substitute for beef. Bison has less calories, less cholesterol, less fat and more iron than beef. Cook it the exact same way you would all your beef dishes. This is a little harder to find, but there are several good online companies. You can also get bison steaks, roasts, etc from these companies.

I like Morning Star Tomato Basil Pizza vegie burgers and Trader Joe's Indian Masala vegetarian burgers.

For chicken, I use corn flakes or ritz and make "breaded" chicken.

I'm having similar problems. One that I plan to try next week is to take a little lemon juice, and some herbs. rub the chicken down with the mixture, wrap in foil, and grill. Another one I do with chicken is to cook it in salsa. Then you can serve it over some brown rice, or put it in a tortilla with sour cream, lettuce, etc. Most times I put in some corn in it to make it a little more filling.

I'm thinking I'll try some of the other suggestions, and can't wait to see what else gets mentioned!

I eat Mahi Mahi, chicken, turkey (lean ground mainly), tilapia, tuna , eggs (egg whites) and once in a blue moon I'll have a lean beef of some kind.

Marinate chicken in balsamic vinaigrette with garlic and pepper, or in Orange Juice, use lemon pepper or garlic pepper to season.... add to homemade whole wheat pizza with 2% cheese and lots of veggies.

turkey burgers mixed with spinach and mushrooms (mmm.... )
    turkey meatloaf
you can make chicken rolls (pound a chicken breast flat, put 1 slice of low fat mozzarella cheese and 3 asparagus tips in the middle and roll. Put in a a baking dish and with marinara sauce and bake at 350. Mmmm..... great with whole wheat pasta if you like pasta. I serve it with baked red potatoes.

go to sparkrecipes.com there are tons of great recipes on that site!

Salmon. Full of "good fats". Tasty, can be made with lots of different sauces (I usually just lightly salt and rub it with olive oil, but my wife likes it with pesto).
  • I'm vegetarian, so I eat fake meat (usually Gardein Chik'n Filets), but this oughtta taste great with real chicken as well.

In one pan, I cook some chopped onions until they're slightly translucent, then add some chopped carrots, chopped celery, chopped red/green/yellow peppers, and some garlic. I stir it often until the onion is caramelized. Then I add 1 part apple juice to 2 parts vegetable stock (you could use chicken stock), and heat it on high to let it boil and reduce, stirring it often.

While that's reducing, in another pan, I cook the Gardein Chik'n filets. I brown it on one side, then turn it over. Immediately I spoon some of the reduced sauce and chopped veggies on top of it (even if it's not fully reduced yet, it's okay) and let it to continue browning the second side. When it's done, just plate the filets and pour the remaining reduction and caramelized veggies on it. It's delicious!

Really anything Morning Star! My son is diabetic and I need to, as his mom, make certain that he has significant protein but not all that fat that usu comes with it.

Betw' the Real Egg (product) & the above mentioned veggie sausage, our breakfasts are phenomenal! and the calories are minimal, as well...

    Good eatin'

Frozen cooked shrimp. Nothing is easier and it's just about as light as you can get.
