I actually find eating meatless much more convenient than having to think ahead and thaw/cook meat. Focus on the quality of your carbs (think whole grain/quinoa/carbs from veg like sweet potatoes) and you'll actually get in some protein too. My go-to protein sources are tempeh, eggs, greek yogurt and nuts. Avoid sugary-carb overloads like muffins and cereals. Instead, opt for natural choices with no added sugars like brown rice, plain oatmeal, starchy veg, fruit and leafy greens. I think my diary is open if you want to take a look.0

i've noticed that my carbs are much higher since i stopped eating meat. i used to pretty much do 45% carb/25% fat/30% protein without a problem every day. now that i'm not really eating meat (7 days so far! and i've only eaten meat 4 times in the last 3 weeks) it's more like 60% carbs/25% fat/15% protein. some days, my fat is a little higher and my protein a little lower.
most of the research i've seen states that between 10-30% of your daily caloric intake should be protein. i'm not building muscle and am getting at least 10% of my calories each day from protein. i'm thinking that as long as my higher carbs and higher fat are coming from healthy sources (whole grains/complex carbs, fats from nuts and seeds) i should be okay... it's just hard to break a lifetime of being taught the supposed 'right' way of eating!0
