Cheap, tasty, healthy. I have eaten it nearly every day since I posted this (check my diary if you don't believe me) and if I wouldn't stuff myself with snickers or wine now and then I would probably disappear on the scale one day.
Don't you find that monotonous? Delicious as it looks. The wonder of food is its glorious variety! Having said that, you're probably like my wife, she has eaten exactly the same for breakfast and lunch for the past 30 years to my certain knowledge, and tends to cook dinner on the principle 'If it's Tuesday, it must be x'. She doesn't like going out to eat and particularly hates 'food that's been messed about', ie has a sauce, a breadcrumb or batter coating, etc. Drives me crazy but fortunately I do a lot of travelling and cook my own a couple of nights a week when I'm home, more so now I'm being careful about calories.0 -

First of all, congratulations. You're Indian and so you have a splendid cuisine to choose from! I don't know what curry is exactly, I guess it comes in all forms and colors. I buy Red Curry from "Real Thai" because that's easy to add and cheaper than any other curry they have available here in China.
Oh, and if you can see the picture in my original post, the recipe is right in there.0 -
Ah so the recipe is to use thai Curry paste on the chicken and fry it? Never thought of that. Simple yet doesn't sound bad at all. Good find!0

… And my wife is exactly like you, asking me everyday why I don't change my dinner. Then I tell her: okay, tomorrow I'll try it for lunch and put the eggs to the evening.
Seriously, I can see your point. But the thing is, I like what I eat and don't really feel like changing anything. It's also easy calorie counting and why would I back the wrong horse if I'm content with this one!0 -

Apparently not all folks can see the picture in my OP. Therefore here a textual conversion:
Red Chicken Curry Breast
Ingredients:
Chicken breast (200 gr)
Red Bell Pepper (72 gr)
Thai Red Curry paste (<50 gr)
Small potato
Broccoli (1/2 cup)
Olive oil (2 ts)
Basil (1 ts)
Cut the chicken and potato into smaller pieces. Mix with oil and curry paste and fry on high fire until chicken is sealed. Put the lid on and fry on low fire for abt. 15 minutes. Meanwhile boil the potato and broccoli until medium soft. Add this to the chicken-curry mix and fry for another 5 minutes without lid until the mixture is no longer watery. Serve on a nice plate and add pepper and basil for a final touch.
Calories: 470
Carbs: 11 gr
Fat: 11 gr
Saturated fat: 4 gr
Protein: 70 gr
Vitamin C: 153 mg
Variations I have tried:
- If you want lower carbs leave out the potato (although it's filling) and replace with mushrooms and/or spinach.
- For your sweet tooth add in some pineapple chunks.
- You don't have to use the spicy red thai curry paste - alternatives are Indian curry paste or massaman curry (extremely yummie but oily and I haven't found the paste yet).
Anyway, the variations are countless, just play with it, also with the colors but keep in any the breast and any sort of curry. Whatever else you do (within limits) won't change the nutritional value much.0 -
