help with veggies!

Hi all, I am new to these forums, but am interested in tapping into all of your resources. I have up to this point in my life been basically a carnivore, plus potatoes. I know i don't eat nearly enough vegetables, but I just don't know a lot about different ways to prepare them. At my house we end up eating salad, or cooked corn or carrots a lot,the only vegetables that I have tried and would rather die than eat are cauliflower, parsnips, and turnip, otherwise i'll try nearly anything I am looking for suggestions on how to get some more variety,( preferrably the dark greens for the iron) and some tasty recipes or whatever you have to offer. I look forward to hearing some ideas/recipes

Broccoli is one of my favorites, I like it steamed with salt and pepper. Use sweet potatoes in place of white ones, the sweet potato is versatile and a slow burning carb. I love cabbage cooked in a skillet with some ginger and garlic, let it wilt and then dash soy sauce over it and let it absorb some of the flavor. I can eat an entire head of cabbage that way. You can fix fresh green beans the same way and they are amazing as well.0

Yesterday, I made a fruit smoothie in the blender (frozen bananas, frozen blueberries, 1%milk) and threw in a cup of fresh spinach. It looked gross, but tasted awesome. 4 of my 6 children (ages 12-2) drank it too. My son (who doesn't like veggies) asked for 2nds. I've also made Kale Chips (recipes are all over the internet) in the past. My 2 year old inhales those.0

Puree cooked veggies and mix into mashed potatoes, if scared, start with just a bit and slowky build to 1/3 or so, even more. Veggies that work well include:
Butternut squash. Makes slightly sweater and gived golden color
Spinach. Beautiful green color, works esp. well when serving salmon
That parsnip would be amazing too, lovely sweet flavor, not "rooty" at all
Also, just commit to try different veggies. Every week pick a new seasonal veggie, google recipes and go for it. My newly found new veggies include garlic scapes (make pesto with them), beets ( roasted like you roast potatoes or cooled and served with spinach walnut salad like one often does pear), and bok choi ( google way to serve with garlic or oyster sauce). I will admit that I also got to know which veggies I just do not like ( jerusalem artichoke!), but it was worth the experiment0 -
If your looking for verity you should pop down to the library and pick up random ethnic cook books for ideas. My faves are anything Asian almost always healthy, fast and tasty0

I love my veggies! (I'm also a carnivore too) and love making them a dish of their own rather than just limply plonked on the side of the plate for token's sake.
