fibre & iron

Hi, I am doing quite well losing weight and trying to keep a watchful eye on my nutrition. I do okay with most of it but I always struggle to meet my fibre and iron quota... any ideas what I can eat to up these levels? I struggle with my potassium levels too (not enough) ... I don't want to turn to suppliments unless I have to as I eat fairly well and feel I should be able to get this from my food, so any ideas gratefully received....

Kidney beans maybe. I like to use them in a 3 bean salad.0

Thats a good idea, I have some of those but havent eaten them for ages. I'll soak some tonight. I just bought some soya beans actually so can eat them together0
