fresh spring rolls
I love this a an alternative to rice dishes, which can be high in carbs
In Asian food stores, there are things call 'rice papers" they are big, round, paper thin and whte
I bring some water is a large flat fry skillet to a gentle boil, put 1 in at a time, for a few seconds only
Take it out and fill with:
Lettuce leaves
Shredded carrot and cucomber
finely chopped green onion
finely chopped garlic
Fresh herbs: basil, coriander, mint
a protein: preferrably steamed chicken or shrimp
Roll it up nice and top with this simple dressing:
6 peanuts crushed
2 TBS rice wine vinegar
a touch of sweetener
a sprinkle of cayenne or dry red chille
chopped shallots
YUM!

Ooh, that sounds yummy. Spring rolls are also great with tofu. At the deli where I used to work, we filled them with lettuce, sprouts, tofu, and rice noodles and served them with thai peanut sauce. Soooo yummy! Unfortunately I moved to a smaller town that doesn't have an asian foods store, so I haven't been able to eat spring rolls in a long time.0

I want to make some but I hate the peanut sauce they serve with them in the US. In France it's some kind of orange sauce that is so much tastier. Got to find that recipe first...0

I love those too! I usually also put in rice vermicelli and baked tofu, but for lower calories veggies are better. Thai basil is also good. So yum with peanut sauce!!0
