oatmeal pancakes-hearty and healthy

I found this recipe online, and tweaked it a little, super filling and super healthy!

1 cup low fat milk or water
3/4 cup uncooked oats
3/4 cup oatmeal flour
1 tsp baking powder
4 egg whites
1 tsp vanilla
1 tbs honey

to make oat flour, just put oats in a food processor or blender and blend till its like flour.
beat egg whites till stiff peaks form.

heat milk/water until hot, stir in oats. Set aside. stir together dry ingredients, add in oat/milk mix. add in vanilla and honey. fold in egg whites till well incoperated. water can be added if mix is to thick, but it will be thicker than regular pancakes.

cook on a non stick pan or pan sprayed with non stick spray until golden on both sides.

    This is great, but I have a couple of shortcuts. :)

    First, if you use quick cooking oats you don't need to grind them. They will expand upon cooking. Also I find you don't need the milk, I just add a tablespoon or two of fat free half n half and this works just as well. Use more water as the thinning agent. Also I chop strawberries and put them in there instead of honey, it is yummy.
