eggplant parmesan recipe??

I'm really wanting to try and make eggplant parmesan we're trying to incorporate many new fruits and veggies into our diets and I have a very picky husband and son lol I want to make something they will both love and we love chicken parmesan so I figured why not try this anyone have some good recipes and I know this is going to be a stupid question and I'm not expecting it to taste the same but how much different is the flavor of eggplant parmesan from chicken parmesan?? Thanks

I way prefer the egg plant version of it, Make sure you salt the slices a let sit for at lest half n hour before pan frying them or they will be very bitter. You see that a liquid will seep out.0

I like eggplant parmesan more than chicken parmesan. It's about texture for me, and also, I think the eggplant blends better with the other flavors. I also recommend using fresh mozzarella if you can, and fresh basil. Yum!0
