How I'm going to drop 3 lbs a week on 2700 cal/day

Seriously. I think I can do it.
Here's the plan:
I'm at the point where I think I can bike to work again (knee surgery recovery is far enough along). I'll do that 5x a week. It averages about 800 net calories per round trip. That's 4k cal/week.
I'm walking at my desk (treadmill desk) for 5 hours a day at 1.3 mph, 5 days a week. Given my size (6'5", 17.5 stone, or 195cm, 110 kg), that equates to 900 net calories a day, or 4.5K cal/week.
I coach youth sports (actively), so I've got 3 hours of light activity that adds another 500 cal/week.
With a BMR of around 2400 cal/day, I burn 16.8K cal/week by existing.
-Total for my activity level is 25.8K cal/week
Now for the diet:
3lbs a week means a deficit of ~7K cal/week (3 lbs fat to 1 lb muscle lost is average, so around 2300 cal/lb). That leaves 18.8K cal/week or 2675 cal/day to consume. Simplistic, but I like simple plans.
I'll have to walk up the stairs, do pushups, shoot hoops with my kids, or just plain fight through to burn those last 25 cal/day.
