Hi all! I am looking for a baked oatmeal recipe that is tasty and that will make it past two picky children. Thanks!

I like this one. I think it's sweet enough as is (I actually cut sugar down to 1/4 cup) but my husband throws a spoonful of honey on top. Make sure your bananas are really ripe or the texture will be a little odd, and it won't be as sweet. You can easily substitute frozen berries.

Real easy, very yummy and it heated up fairly well for the week, I just put in the microwave with a drop of skim milk and maybe a teaspoon of sugar free maple syrup when I heated it up, but the day of, it's fine unadulterated.
I think I'll have to make this again soon, it was so easy and so yummy.0 -
This is a huge family favourite!! All five of our kids l.o.v.e. it, so I'm sure yours will too.
Baked Oatmeal
Mix together:
1/2 cup oil (I substitue 3/4 cup unsweetened applesauce)
1/3 cup sugar
1Tbsp baking powder
1tsp salt
2 eggs
1 cup skim milk
3 cups oatmeal (we like the texture of large flake the best)
1 cup (or more) add-ins (our favorite is strawberries, but we also love blueberries, or mashed bananas with strawberries/blueberries, or diced apples, or raisins, etc...)
Pour into greased 8x8 pan, and sprinkle with some cinnamon and 2Tbsp brown sugar.
Bake at 350* for 30-35 minutes (until centre is set).
Serve with a splash of milk. This will yield 6-8 very filling servings.

I have an easy preparation that my kids enjoyed. I'd make 4 servings of regular oatmeal the usual way (in a pot with water, cook till done), but then I'd pour it into a loaf pan and put in the fridge overnight. In the morning, slice the "loaf" and fry up in a small amount of butter in a non-stick pan till it gets browned on both sides. Let the kids put syrup on it. They ate it up. You can add raisins to the oatmeal before it sets up, if your kids would like. Also cinnamon.0

Ingredients:
2 medium ripe bananas, mashed
1 cup of uncooked quick oats*
1/4 cup crushed walnuts
bake 350 for 15 min
Best fresh out of the oven!!!

This is the recipe I use, too, although I put in an extra egg and a lot more spices. Often I will add some cocoa powder or some peanut butter. It's very versatile.0 -

I've tried this once. I loved it and my wife, who doesn't really love blueberries, still enjoyed it. I think this recipe would be great substituting in strawberries or apples & cinnamon as well.
