95 calorie Blueberry Banana Bread Muffins

Makes 12 servings
1 cup mashed Bananas (2 medium)
1/4 cup white sugar
2 tbsp light butter
1 large egg
1/4 cup unsweetened applesauce (I used blueberry, but I've also made the banana bread with natural or grannysmith)
1 1/4 cup all purpose flour
1/2 tsp Baking soda
1/4 tsp salt
1/2 cup fresh or frozen, thawed blueberries
1. Preheat oven to 350°.
2. In a large mixing bowl, combine softened butter and sugar, and beat with a mixer at medium speed, about 3 minutes or until well combined. Add the egg and applesauce, and beat another 2 minutes. Fold in the bananas.
3. Lightly spoon the all-purpose flour and whole wheat flour into dry measuring cups, and level with a knife. Combine the two flours, baking soda, and salt in a separate large bowl.
4. Add the flour mixture to the banana mixture, 1/2 cup at a time, mixing after each addition until moistened.
5. Add the blueberries and gently fold in.
6. Spray each cupcake paper or muffin tin with non stick spray and fill them 2/3 to 3/4 full until all batter is used.
7. Bake for 25-30 minutes. They are done when you insert a toothpick and it comes out clean (don't stuff it in a blueberry, it won't be clean :laugh: ). Transfer to a wire rack to cool.

I didn't have whole wheat flour, so I used all purpose instead. To make into normal banana bread, just omit the blueberries and use a loaf pan. This will need to cook for 50-60 minutes if made into a loaf.
Edit: Making a banana bread loaf without blueberries will yield 10 generous servings at 110 calories each.

Thank you so much for this recipe! I baked them this morning for breakfast and they are SO GOOD!!! i couldn't wait to allow them to cool before devouring one. Really easy to put together and so good w/a little bit of cream cheese on top too. I'll be baking these again really soon0
