I found this recipe on Instagram-I think it's from DashingDish.com
Peanut Butter Protein Cookies
1 c peanut butter
1 egg
1 egg white
2 T applesauce
1 scoop protein powder (about 1/4 c)
1 c oats
1 c stevia (or any sweetener that measures the same as sugar)
1/8 t salt
1 t baking soda
Mix first 4 ingredients (you can microwave the peanut butter to make it easier to stir together), set aside. In a separate bwl, mix all dry ingredients. Add dry ingredients to wet ingredients, mix until combined. Make into 24 balls ( I used a cookie scoop) and lightly flatten with a fork, place on a cookie sheet lined with parchment paper. Bake at 350 for 6-8 mins.

Thanks! And yay for the stevia! I love low carb ideas.
I'm gonna try this with some PB2, and make em into bars, and use chocolate peanut butter protein powder instead. May add some almonds too, mmm..0 -
Forgot to ask, how is the texture on these? Are they dry, or fairly moist?0

These sound pretty dang good. I may make these later.
Someone asked about nutrition facts and I plugged it into the MFP recipe calculator. Per cookie:
120 calories, 12 carbs, 6g of fat, 4g of protein.0 -
What is the calories?
It will kind of depend on your protein powder. I used PlantFusion Vanila Bean (120 cal per scoop of powder) which made 27 cookes for like 75 calories each.0 -

The texture is like a slightly crunchier peanut butter cookie- I used crunchy peanut butter, so they might be softer if you used creamy peanut butter.0 -

I used ISO Pure protein powder with my mixture, made 33 cookies ( maybe I made them too small?) but the calories was 81 for each cookie (:0
