The store had all the colourful bell peppers on sale today, so I bought a bunch of them. What is your favourite thing to make that highlights bell peppers?

Three hings i like are stuffed peppers, and chop up peppers and onions and eat w/ sausage. Chop up peppers and other veggies and make an omelette. Oh and a veggie frittata.0

Great minds think alike--I bought stir-fry beef as well, and that was the one thing I already had planned! LOL I LOVE fajitas, but never had them with steak before, only with chicken.0 -
Honestly, my favourite way to eat bell peppers is raw with baba ganouj.0

What I usually do with peppers is that I bake them. I take out the inside of the peppers and stuff them with a little bit of rice with graunded pork and some herbs and tomato. Really delicious as a dinner dish.0

salsa chicken
Pace Chunky Salsa(Net Carb - Salsa - Mild, 8 Tbls
Perdue - Thin Sliced Chicken Breast, 1 container (5 breast pieces ea.)
Cheese - Mozzarella, part skim milk, 3 oz
Raw - Bell Peppers, 1 Medium
water 1/2 cup
cut the chicken and pepper in to small slices. throw in a pan with pam spray.
cook till chicken is done no pink.
then pour 1/2 cup water in pan along with salsa and stir
cook till water is gone.
add cheese on top and stir again.
i sever this with 1/2 a cup of low fat re-fried beans
WHOLE FAMILY LOVE THIS ONE

stuff peppers
Raw - Bell Peppers, 1 Medium
Uncle Ben's - Instant Brown Rice, 1 cup
Generic - Ground Chicken Breast, 3 oz
Heb - Low-Moisture Part-Skim Mozzarella Shredded Cheese, 1/4 cup
Pace Chunky Salsa(Net Carb - Salsa - Mild, 4 Tbls
i cook the rice and ground chicken breast up then i mix them together and add salsa
then slice the pepper in half stuff it with the mix top with cheese
bake in a pan with pam spray at 350 for about 30 mins
make 2 servings0 -
My favourite thing is to have them raw, as the basis for a salad. Chop them up and add some meat/egg/cheese/nuts/seeds, seasoning, mayo/salad dressing/etc. I often have that for lunch. They are also nice cut into strips to dip in hummus, etc.0

I made these stuffed peppers and they were pretty delicious. I baked them instead of using the crockpot.

Sweet n Spicy Thi shrimp
bag of frozen mix pepers (thawed and drained)
1 bag of med shrimp
1 med onion
1 med tomato
bottle of thi chili sauce
1 tbls "Can't bel;ieve it's not butter
1 box of Wheat speg noodles (cooked)
saute shrimp and onion in the butter till pink
add tomato and peppers
add sauce
serve over pasta..mmmmm sweet and spicy shrimp..0
