A breakfast for Jonnythan... with some pictures, too.
Let me start by readily admitting I've been a pain, lately. Well. Perhaps I've always been a pain. Lately I've been an annoying pain. See, I have this friend who eats breakfast every day, pretty much the same thing every day with a couple variations.

Tasty looking, right? Yeah, okay, I'll give you that. It has some curb appeal. The macros aren’t awful, either. But, ohmahgawwwd the ingredient list has given me a migraine (and a stomach ache, to boot)!

Here’s what I made today (just try to ignore the little “helper” who decided he needed to “test” a second sandwich after his bath):
It took about an hour and a half (partly because I had a little helper and partly because I just totally winged it. Wung it. Wanged it. Er... you know what I mean). I could have easily done the whole batch in about 35 minutes (with 20 minutes of that time being hands-off baking time). It cost me about $7 and made six sandwiches. I’m going to put them (well, the four that are left after quality control testing, courtesy of the little “helper”) in the freezer wrapped individually in foil and then in a plastic bag. I would guess they’d be good for at least a month. I doubt they will last the weekend though at this rate. To reheat them I’ll probably just toss one in the oven around 350 for 5-10 minutes. You could definitely use a toaster or toaster oven, too, I just don’t have one. Here’s the macro breakdown:
Note the ingredient list. Do I even need to remind you of all the stuff in the other ones? Stuff I can’t pronounce and probably can’t digest, either. I used all organic ingrediants but you don’t have to. Also, if you used a regular english muffin you could have a top and bottom for the same calories. We just like the sprouted grains here and don’t mind the open-face style. Mine has a great vitamin boost with the chard, as well (Jonnythan are you paying attention? Vegetables!) You could add a slice of turkey or sausage or something to bring the protein up a bit, comparable to the store bought ones. I’ll probably end up doing that when I reheat them, honestly. Just didn’t have any on hand!
As for the recipe, the ingredients are above and really it’s so easy... Mix all the eggs together and beat. Beat ‘em up good. Add the chard (chopped and boiled or steamed until mushey-ish), salsa, whatever other veggies you like, onions or peppers would be good, too. Spinach if you don’t like chard. Or kale. Just promise me you’ll add a little veggie something or other... I’m veggie-obsessed. Plus I added some lemon pepper, some chopped garlic, basil, a titch of cayenne pepper, some all purpose seasoning and... hmm... possibly an eggshell or two as the “helper” was in charge of cracking them. You could conceivably chop your bacon/ sausage/ turkey/ whatever and add it to the mix at this stage, too.
Then I poured it all into a baking dish. Then poured it in a different dish. Then a third dish. (I told you I wasted time because we were wingin’ it!) I just wasn’t happy with the thickness of the “batter” in the first dish, the second would have made squares too small for my liking, the third time’s the charm though, right? Pop it in the oven somewheres between 350-425. Just... In that range. Little “helper” had to keep changing the temperature a bit while it was baking. He’s really a very hands-on “helper.” Ours took about 20ish minutes, give or take. Just check it with a toothpick (or with your eyes and a fork, or your finger, like us lazy folks who can’t ever remember to buy toothpicks) to make sure it’s done in the middle. Then cut it into squares, pop it on your muffin, add cheese, let cool, wrap and freeze. I’d suggest NOT toasting the english muffins unless you’re going to eat it right away and not freeze them. They get “toasted” when you reheat. Hmm, well, if you use a toaster oven or a real oven. Not sure how that would go in the microwave. Let me know if you try it.

breakfast is easy if you make time. 1 or 2 scrambled eggs with a little lowfat shredded cheese in a corn tortilla with salsa. Add spinach if you like or mushrooms. I tend to eat baby carrots with it. You can eat it in the car if you run out of time. Can make a fried or poached egg and put it on an english muffin. The part of the egg with the most nutrition is the yolk and so I don't like to use only egg whites plus they have no flavor. Using eggs that are vegetarian fed and/or cage free is healthier.0

I usually make scrambled egg (organic cage free) and boil some organic oats and mix the two with some hot sauce great breakfast.0

I don't disagree with you. It really is smarter and more healthy to make your own breakfast. You know exactly what you are putting into your body. The only problem is that sometimes when you are on a diet, its easier to look for easy quick things that you can count calories with. I am not saying its great all the time because obviously the body need things that are more natural etc. But when you are on the run and can't do that breakfast, its easier to just pop something in the toaster and then move on with your day. Not to mention doesn't it seem that ever since you got on a diet all you do now is obsess over numbers and types of food and menu's? It's nice to just let it be once or twice a week.

I had a similar one this morning, but mine is in a tortilla and the 2 eggs are just barely holding together the all the onion, bell pepper, mushroom and spinach. I cook the veggies first in the frying pan ( the spinach wilts quickly so throw it in just before the eggs) add a little salsa or avocado, if your feeling frisky - both. Wrap. Eat. Yum.0
