I am fairly new to the kitchen "behind-the-scene" experience.
Recently, my sister showed my how to make stir-fry chicken using a couple of ingredients we had at home (bell pepper, onions, spinach).
So like most people who learned how to make something new (and delicious); I am curious on what ingredients you guys use for your stir-fry recipes?

Any protein, cut into bite size pieces. Brown them in a skillet and then set aside and cook your vegetables. Use medium-high heat.
In a skilled with some oil or spray, fry up a ton of vegetables - I just clean out the fridge. Prepare them all to similar sizes and add them to the skillet based on how much time they need to cook - onions, carrots and broccoli stems first, then peppers, zucchini, green beans, garlic, ginger, etc,
Then when the veggies are still crisp but getting cooked, toss in your sauce. I thicken mine with a little cornstarch usually which helps to coat everything well. Most people use way too much sauce, so I normally cut all recipes in half. Once it's all coated, add your meat back in and stir well and add any last minute greens - spinach, fresh herbs like cilantro or basil, or chopped kale, and cover to steam for 1-2 minutes to soften before serving.
Here are a few really yummy sauces I like:
Szechuan Sauce (combine well before adding to the stirfry)
1/4 cup water
3 Tbsp - 1/4 cup reduced-sodium soy sauce
1 tablespoon tomato paste
2 teaspoons rice wine vinegar
2 teaspoons sugar (could use substitute if you have it)
1 teaspoon crushed red pepper, or to taste
1 tsp cayenne, or to taste
1 teaspoon cornstarch
Orange Ginger Soy
2-3 Tbsp warm water
1/4 cup/4Tbsp frozen orange juice concentrate
3 Tbsp reduced-sodium soy sauce
1-2 tsp minced ginger
1 Tbsp cornstarch
1/2 Tbsp chili garlic sauce, or sriracha
Soy, Lime and Spicy Miso Paste
2-3 Tbsp warm water
2 Tbsp lime juice
2 Tbsp reduced-sodium soy sauce
1 Tbsp gochujang (spicy fermented soy paste)
Spicy Peanut Sauce
2 Tbsp reduced-sodium soy sauce
45g/3 Tbsp All Natural Peanut Butter
1 1/2 Tbsp rice vinager
2 tsp sriracha
1 tsp granulated sugar
2-3 Tbsp water, if necessary
