So I love to create low calorie dishes that don't seem like diet food, and this is my fave so far. Goes really well with mashed cauliflower. Please read this recipe through before trying. If you've never flambeed before, please be careful.

Pam – Olive Oil
(2) 5 oz filet mignon
1 T. Minced Shallot
Small package sliced mushrooms
½ shot of Brandy
1 c beef stock
1 c fat free half and half
1 T. Dijon Mustard
1 T. Worcestershire Sauce
Juice of 1 lemon
Green Onions Chopped – handful
Season Steaks with Salt and Pepper
Sear steaks in hot pan with Pam for 3-4 minutes on each side
Remove steaks and take pan off heat. Steaks should be med rare. If you need to cook them longer, I suggest using the broiler.
Add more Pam
Add shallots and mushrooms
Take pan off heat. Add Brandy and light with long Lighter.
**Be careful—keep your face back away from the pan**
After the flame cooks out, add: Stock, half and half, mustard, Worcestershire and lemon juice.
Bring to boil, then reduce to medium heat. Cook until liquid thickens to a sauce, should reduce for at least 10 minutes.
Add Green onions and steaks back to the pan to warm through.
