Garlic Garbanzo Bean Burgers
4 slices of bread (whatever kind you like)
4 cloves garlic
1/4 cup red onion
1 egg
1 (16 oz) can garbanzo beans
1/4 tsp salt
1/2 tsp pepper
1) Grind slices of bread in food processor. Set bread crumbs aside in large bowl.
2) Feed garlic cloves into food processor with blade running to mince finely. Add onion to food processor until finely diced. Stop a few times and scrape down sides of bowl. Don't over process. You don't want it to be mush. Also, you can add more onion depending on your taste. Add garlic/onion mixture to breadcrumbs.
3) Drain and rinse garbanzo beans to remove excess sodium. Save 2 tablespoons of liquid and put in food processor. Add beans, egg, and salt & pepper to food processor. Pulse until blended. Do not over mix, it should be a rough texture, not smooth.
4) Add bean mixture to the bread crumbs & onion/garlic mixture. Mix together. Divide mixture into 4.
5) Take each 1/4 and form into patty. Dredge each patty in flour. Remove excess flour. Grill patties in skillet with Pam or on George foreman grill til golden brown.
I like to top mine with tomato and lemon-pepper mayo (no bun).

1/4 c mayo
2 tsp pepper
1 tablespoon lemon juice
