Jicama (pronounced Hic-a-ma) I love this. for 1 cup-It is low in calories (different sites say between 50 to 79 calories). It has low carbs 11, and fiber is 6, so it is very fiberous. It has 1 protein and 195 potassium. only 5 sodium. It is also called Yam bean or Mexican potato. It is a root. Lots of people say it taste like a potato and apple. I say the texture is that of a nice crisp apple (juicy), but I want to say, the flavor is a hint of potato and a hint of fresh (out of the garden) string beans (the beans out of the pod) yumm. cut it in strips and eat it raw like a carrot, you can cut strips, season them and back for french fries. use in salads, you can cut it in size of crackers and put cheese, pickles etc on them (use like crackers). You can cook with it, in stews, stir fry's what ever. and it stays crunchy when cooked. This is a very versital veggie.. here is a youtube link on how to pick one out, cut it, raw or cook etc. I find it at Walmart close to the squash and potatoes. Last year Walmart had it at the end of all their apples.

Thank you very much for reminding me about this vegetable, RaineyLaney . I had it once and liked it. I don't know why I never bought it again.

I wish I could eat it - turns out I was highly allergic. I would definitely try a small amount first as it's not like a potato. It's something different.0

I love it - but I've never cooked with it. I just eat it raw. Sorry, no help here, but I think I will be buying some next time I go shopping!0

grate jicama ,tomatoes,cucumber and add lime juice ,pinch salt and if u like add chillies...great taste0

Jicama and an avacado, a little agave nectar or honey and cilantro and lime juice, marinate for 1 hour... best thing you ever ate! Put it over a bed of baby greens for an "all inclusive" salad0

I love it plain or in salad.
I've made a quinoa salad with jicama that's really good:
6 cups cooked quinoa
2 cans black beans
3 cups corn
2 cucumbers - diced
1 bunch cilantro - chopped
1 large red onion - diced
1 large jicama - diced
1 lb grape tomatoes- halved
3 avocados - diced
Dressing (similar to Wahoo's spicy cilantro):
2 TBS mayo (I used canola mayo - 40 cals per TBSP)
1/2 cup fat free half and half
1 bunch cilantro
juice of 1 lime
1/2 a sorano chili
salt to taste
Blend until happy.
ETA: This was an enormous batch that I made that was lunch for 2 for a whole week. It can easily be cut in half and still be a large quantity.0 -
Just eat it raw, but love it0
