I'm getting ready to take a medical mission trip to Nicaragua and would really like to take some healthy snacks with my that will pack / travel well. I'll only be gone 9 days but want to aleast attempt to eat something healthy. I will not have much of a chance to purchase items while there adn will only be able to eat what they serve - lots of carbs to sustain. Any / all suggestions will be MUCH apppreciated. BTW packing space is a little limited as well. I plan on taking a water bottle filter and water enhancers to help offset my water intake.

The first suggestion that comes to mind is peanut butter! There are great, healthy organic kinds with less sugar than the bigger brands that do not have to be refrigerated (but some do, so make sure). Peanut butter gets a bad reputation for some reason, but if you're not eating the whole jar in one sitting or anything, you can't beat the cheap mobile source of protein that's ready to eat as-is. Also, raisins or other dried fruit!
Unrelated to food, I'd also suggest a good multivitamin.
