Hawaiian Kalua Pork in the slow cooker

I'm barely getting by so not a lot of cash for food, especially when I'm not eating carbs. Protein and veggies are expensive. Anyway, I picked up a pork shoulder pretty cheap and I'm cooking it in the slow cooker.

Imu Pig is a a Hawaiian favorite of mine. This is as close as I can get here in upstate NY.

6lb pork shoulder
1T Hawaiian black sea salt (it's coarse sea salt and charcoal, use what you got)
10-12 drops liquid smoke

rub salt and liquid smoke all over the pork, place in slow cooker, cover with water

16-20hrs on low, yep, that's right, 16hrs. Put it in before you go to bed and it'll be ready for dinner next day.

When I do 3lb of pork i leave it in 12hrs.

I serve this with carmelized brussel sprouts thinly sliced and fried with bacon until the bacon is super crispy and the sprouts are browned and yummy. Toss with balsamic vinaigrette.

Sounds good. Might have to try something similar next time we get a shoulder.
