Healthy dinners that are quick and cheap?

I am looking for some ideas on healthy/quick/cheap recipies for dinner?

No coconut please.

Husband is a big meat guy if that helps. Ideas are appreciated. :)

    stir frys! take a large skillet- add plenty of chicken, beef or shrimp to a good amount of mixed (or just 1 kind) frozen veggies- add a little bit of a stir fry sauce (or fajita mix, depending if u want an asian or mexican flare). poof! easy- quick and healthy! if u want a starch in there, serve over a serving of brown rice. i stir fry almost daily- easy and delicious!

    1 use my crock pot a lot.

    1 chicken or roast of your choice, as long as it's lean.
    potatoes around the roast or chicken
    carrots, parsnips, garlic, turnips, or other vegetables around the meat
    spices of your choice
    a cup of broth, beer, or water

    cook on medium all day.

    I also steam fish or chicken with lots of veggies and potatoes or rice.

    I make stir fry with lean beef, pork, or chicken cut in thin strips and lots of veggies. Serve with rice. If you're not too worried about sodium, you can get packets of stir fry seasoning.

    I make a killer chicken soup with carrots, celery, onions, and garlic with wild rice or egg noodles.

    Google a recipe for shrimp creole. Cut down on the oil, and you have a wonderful low-cal sauce for rice.

    You can find lots of great recipe books on the bargain table at your bookstore. I modify some of the meals to our tastes or just reduce oil and other high calorie ingredients. Some of the "diet" recipe books are great. Even your local library will have some good ones, and you can copy the recipes you want to try.

    also- healthy sausage (those chicken apple sausages as well as lean turkey sausages are both really good)- with a lot of peppers and onions. i like putting a lil olive oil and soy saice on it in the pan- SOOO good
