Having a house guest. And she is a picky eater, so no WEIRD ingredients. Looking for something I can whip up quick! Any ideas/help? thanks!

    I dig the lemon butter---are you just squeezing fresh lemon into softened butter?--might throw some minced garlic and parsley into the mix with the butter

    griddle tenderstem broccoli, asparagus and mushrooms for a couple of minutes, then squeeze lime over tuna steak add black pepper and griddle for 2 minutes on each side..... serve. (or cook longer depending on preference!)

    Max 10 mins.

    melt butter over the stove, add some lemon juice (fresh preferred), then spoon over steamed asparagus.

    cant mess it up. (unless you over steam the asparagus).

    edited to add: just noticed this is a lady friend...if theres any chance of her crashing for the night, maybe rethink the asparagus. tomorrows first pee will not be pleasant, and could potentially kill a morning bang.

    edited again to add: checked out your profile, and youre married. so i say go with the asparagus!

    about 10 minutes to mix everything and put in the oven for an hour or two depending on how much you make.

    add butter, salt, pepper, lemon pepper to taste.

    Look at the blog Skinny Taste. They have some yummy, easy recipes. I made potato skins stuffed with buffalo chicken that were good and low calorie. My family even like them.

    This is my go-to kind of food. I usually coat the chicken with herbs and spices and do in a griddle pan (lovely charred lines so looks like you were slaving over the stove!), any kind of green veg (broccoli, cabbage, green beans etc - all cook well in the microwave too for a steamed al dente crunch) and usually a white potato (maris piper are lovely and fluffy).

    Alternatively, put the chicken on a piece of tinfoil on top of a bed of fresh spinach and cherry tomatoes, put a dollop of pesto on top, scrunch up the tinfoil at the top to make a parcel and bake for 25 mins. Steamed, juicy, mmmmm! Great with veg or chop it when it comes out and mix the contents, including the juice with some wholewheat pasta. Also works well with fish, particuarly salmon.

    healthy pizza :) all you need is flatouts (which are 100 cals a piece) a can of peeled tomatoes, some italian herbs, and some string cheese (and veggies if you want). blend up half of the peeled tomatoes with a little of the juice that comes in the can throw in italian herbs and salt and blend more (can add a tblspoon of tomato paste if you want it thicker) spread on a flatout put cheese and throw in oven for like 10 min. ta daa and delicious too :)

    I love broiled cajun tilapia or salmon. You can even buy the salmon fresh and already seasoned at my grocery store. Add some steamed veggies and you have a meal.

    chicken tikka and salad. use greek yogurt with the tikka spices and coat the chicken up before grilling.... yum.

    The broiler can make things super easy - broil steak, pork chop or salmon with a few spices or a fat free salad dressing marinade. While that is cooking, steam some veggies or chop a salad. You could have some whipped potatoes, whole wheat pasta with a little olive oil and garlic or rice as another side item.

    Grilled salmon over brown rice with some steamed broccoli or sauteed kale is tasty. Squirt a little lemon over it, yum!

    Alternatively, I made a pasta dish the other night that was surprisingly good.

    - 1/2 box of whole wheat pasta (rotini, penne, ziti, etc.)
    - 1 can cannellini beans, rinsed and drained
    - 1 can diced tomatoes
    - 1 cup sliced carrot
    - 4 cups fresh spinach, shredded
    - 3 cloves garlic, sliced thin
    - 1 T red pepper flake (optional)
    - 2 T fresh basil, sliced into thin ribbons (optional)
    - 1/2 T olive oil

    Heat the olive oil over medium heat, add the garlic and sautee until fragrant, then add the carrots and cook until just beginning to brown. Be careful not to burn the garlic. Add the beans, stir gently, and cook for about five minutes. Add the tomatoes, stir gently, cook for about five minutes more. Add the spinach and red pepper flakes, cook for two to three minutes until wilted to your preference, and turn down the heat. By now your pasta should be ready, scoop the cooked pasta out with a slotted spoon or spider and add it directly to the vegetables. Stir gently until mixed together, adding pasta water if necessary. At the last minute add the fresh basil as well as any salt or pepper you feel it needs and enjoy. Serves ~ 4.

    Broiled salmon or crab cakes (Already made from Kroger) (10 minutes to make)

    Put under broiler on cookie sheet for about 6 minutes (flip 1/2 way)
    While cooking make a bed of spinach or lettuce on large plate with anything you have, tomatoes, grapes sliced in 1/2, sliced strawberries, blueberries, steamed asparagus, maybe a hard boiled egg 1/4ed. Sprinkle with shredded cheese and maybe some almonds and I like Zesty Italian dressing.

    Add cooked crab cake or broiled fish on top. Maybe a role or English muffin

    Fancy & Easy

    (you could substitute a pan cooked chicken breast)
