This is amazing!

Serves 4.
575 calories, 85 carbs, 18 fat, 10 sugar, 23 protein, 398 salt.

350g fafalle pasta
150g frozen peas
150g sugar snap peas (sliced)
250g asparagus (trimmed and cut to approx. 5cm/2inches)
15 sprays of 1 cal spray
1 large courgette (sliced thinly)
2 crushed garlic cloves
300ml half fat creme fraiche
1tbsp wholegrain mustard
Juice and zest of 1 lemon
25g parmesan cheese
salt and pepper to taste

1. Cook the pasta in a large saucepan of boiling water for 10mins or as per package instructions. add peas, asparagus, and sugar snap peas to pasta and boil for a further 2-3mins.

2. Meanwhile, heat the oil in a large frying pan over a medium heat. Fry the garlic and courgette for 2 mins, or until tender. add the creme fraiche, mustard, juice and zest. Bring to the boil for 2 mins.

3. Drain the pasta and vegetables and return to the pan. Stir in the sauce and the parmesan. Season to taste. Serve immediately.

  • That looks great :) I had to google courgette, I never heard that word but I call it zucchini. Both are pretty funny words, lol
