Any Recipes?

Anyone know of any delicious healthy recipes with low calories (>300)? I would like to try something new, any suggestions are much appreciated!

    For what meal? I made one called "Yummy Crispy Baked Fish" last night that worked out to 252 calories for a 6oz portion of tilapia. that recipe is in our standard recipe rotation at my house! Here's the recipe, it seems like it's a lot of work but it's really not:

    I use 24oz of Tilapia, you could also use Swai if that's what's on sale that week!


    1/2c Fat Free milk
    1 1/2 teaspoons white vinegar
    2 Tablespoons dijon mustard
    Mix the above ingredients in a shallow dish and leave to set for 15 minutes. This will give you a buttermilky/mustardy mixture to dip the fish in.

    In a separate shallow dish mix:

    1c cornmeal
    2tsp salt
    2 tsp onion powder
    2 tsp garlic powder
    2 tsp paprika
    1 tsp thyme
    1/2 tsp pepper
    1/8 to 1/2 tsp cayenne pepper, adjust to your taste (we do 1/8 and even my kids will eat it)

    First turn on your broiler, then lightly spray a broiler pan with nonstick cooking spray. Dip each fillet of tilapia in the milk mixture, turning to coat both sides. Drop it gently into the cornmeal mixture, again turning it over to coat both sides. Set it on the broiler pan, and repeat with all remaining pieces of fish. Cook under the broiler 4-5 minutes, flip, cook 4-5 minutes more or until fish is flaky and done.
