Edamame Vegetarian Chili

1 pkg Morningstar "beef" cumbles
2-12oz pkg edamame
2-14.5oz canned reduced sodium red kidney beans (or any bean of your preference)
1-10oz frozen pkg chopped spinach (thawed)
2-14.5oz petit diced tomatoes
1/4 cup chili spice mix (see bulk recipe below)
1/4 teaspoon cayenne pepper for some heat (optional)
1 3/4 cup of water
1 cube Rapunzel vegan vegetable bouillion-no salt added
(or use your choice of broth, this would alter the nutrition information)
follow the instructions on the package to make the bouillion.
Place all ingredients in crockpot for 8 hours and enjoy!
Chili Seasoning Mix from Wellness Mama
1/2 cup chili powder
1/4 cup garlic powder
3 tablespoons onion powder
1/4 cup oregano
2 tablespoons paprika
1/4 cup cumin
1 tablespoon thyme
To Make: mix all ingredients and store in an airtight container. 1/4 cup of mix=1 package of store bought chili seasoning.
