I'm out of town for work and I'm staying in an extended stay hotel. I have limited means (2 pots and no oven). No slow cooker either. So I need some ideas for healthy stove top recipes.

I would reach for braised chicken dishes with some quinoa, cous cous or rice. Brown the chicken with some garlic and onion, add liquid and flavourings. Braiise about 45 minutes for thighs, a bit shorter for breasts. Google recipes for various flavouring combos:
Chicken teriyaki (soy sauce and a little sugar boiled down to a caramel syrup)
Coca cola chicken (small can of regular coke and soy sauce boiled down to a caramel syrup)
BBQ Sauce (tomato paste, sirahachi and soy sauce)
Coq Au Vin (white wine, mediterranean herbs, carrots and mushrooms)
Chicken Tagine (water, sliced lemon--peel and all, carrots, dried fruit)0 -
Soups would be healthier, on second thought.
Lentil soup (split lentils, tomato, chopped onion and a stock cube) or Soupe au Pistou (frozen veg, a stock cube and a good dollop of pesto just before serving) or Cauliflower (cauliflower, astock cube, a glass of milk, a little butter, some greated cheese--needs to be mashed or pureed).0 -
Home made chicken stir fry is the best way to go. I always like to use fresh squash, onions, peppers, broccoli,zucchini and chicken breast. Brown the chicken in a seperate pan(pot) and cook the veggies in another. Mix together. Or if you are not able to do the fresh stuff, you can always get the california mix in the frozen foods aisle. For seasoning I use salt and pepper and adobo.It is a favorite for the kids too.0
