Low Fat, Low Calorie Tiramisu

Low Fat, Low Calorie Tiramisu.

Serves 3-4.

Ingredients.

8 sponge fingers. (From the bakery)

1 tsp of vanilla extract.

A little less than 1/3 cup strong black coffee.

1/2 tbsp brandy.

4 1/2 oz (125g) cartons of ricotta cheese.

1/2 tbsp of rum or Amaretto di saronne.

1 level tbsp of unsweetened cocoa powder.

2 tbsp powdered sugar


To Prepare.
In a suitably sized baking dish, place the sponge fingers in a single layer.
Mix the coffee, rum, brandy and 1/2 tsp of vanilla extract.
Gradually, spoon the mixture over the sponge fingers.
In a food processor, process the ricotta, the remaining vanilla and 1 tbsp of icing sugar. Continue to blend until a soft, fluffy consistency has been reached.
Evenly spread the mixture over the sponge fingers.
Mix the cocoa and remaining icing sugar together. Then, sift over the top of the tiramisu.
Cover with cling film and refrigerate.

Once chilled, devour at your leisure.
