Camping and Pot Luck dinner, need help!

I need idea for a dish to bring to a pot luck dinner next week. I'll be camping with electricity and a gas stove, but limited everything else. There's a small chili cook off before, but it's questionable how much chili will be left over for the actual meal. Not many people have thought of that, and others are bringing fixings for chili (rice, sour cream).

Other foods that people are bringing are:
Chili
Corned beef and cabbage
Kielbasa and Sauerkraut
Salad
Cupcakes
Baked potatoes
Black Walmut Cake
rice
corn bread

I was thinking about bring some mac & cheese (throw sufferers in a crock pot and viola! an easy dish) but then I looked up the nutritional information, 16 grams of fat in one cup. I'd like to bring something I can eat without feeling totally guilty! There will probably be about 50 people there, so I'd like to bring enough of something that most everyone can have a little of something without breaking the bank.

    Goulash!!!

    Is a spicy beef stew with loads of peppers, traditionally served with homemade pasta but you can just chuck a couple of potatoes in for the starch element and you have a one pot lovely dinner!

    I normally use (for two people)
    250 g diced beef
    1 onion, chopped
    2 peppers (pick your favourite colour), chopped
    veg stock
    loads of paprika and some chilli - as hot as you like it

    Salt, pepper and bay leaf to taste, stick it all in the crock pot, let it cook until the meat starts falling apart, then stick the potatoes in and continue to cook until they are done. Not too bad if you use lean meat and no extra fat :-)

    I like crockpot chicken tacos, and with the chili fixin's there (sour cream, cheese) it's not much work. 1-2lb boneless, skinless chicken breast, sprinkle on top 1 taco seasoning packet, pour over that 1, 16oz jar of salsa (any kind you want), cover and cook on low 5-6 hours. Remove, shred, bingo!

    You could do a pasta salad with lots of fresh veggies. You can make that ahead of time and take a little italian dressing to toss it with right before you serve in case it dries out some!
