Supper ideas please

I have 1# ground beef thawing and no ideas for supper for my family of 4 (me, hubby, picky 5y/o and a 16mo/old). Tomorrow is grocery day - so it's pretty lean around the house - so pantry items will be getting used (canned, boxed items). And I"m at work - so the easier the better.

IDEAS for not too unhealthy but good tasting ideas PLEASE!

    Fry onions in garlic and a add a bit of chilli. Add tin of tomatoes or passata when onions are floppy. Add some salt, pepper and other herbs/spices that you like. Add your meat. Cook up until it is done. Add huge bag of frozen mixed veg whilst it is cooking. Serve with potatoes or mash for kids (but not for you) and a salad.

    ALternatively use it as a bolognese base but you wouldn't have too much of the pasta.

    They are really good and 390 calories per serving if you make as the recipe directs. Before I stopped eating meat, I always made it with ground turkey, but beef would totally work, too. If you don't have enchilada sauce, I think it would be relatively easy to make your own with some tomato sauce, chili powder, cumin, etc.

    Meatloaf is great. thaw out the Ground Beef, grease your pan with olive oil,Add thawed meat,cubed cheese,cubed lite 12 grain bread about 3 slices,2 eggs cracked,onion diced,worchestershire sauce,whatever seasonings you like and either BBQ sauce or Light Ketchup and cook it ...super simple and inexpensive.

    Or how about meatballs? Finely chop carrots, onions and celery and mix into the meat to lighten up the dish and get some veggies into the little one. If you bake the meatballs they're lower in fat.

  • I have a ground beef pasta bake recipe I can type up and e-mail to you if you're interested. It's really simple. Ground beef, pasta, onions, garlic, seasoning, and marinara sauce. I think it was only 350-400 calories per serving and made like 8 servings.
