How to keep chopped veggies fresh?

I would do better to eat veggies if I could chop and store them a head of time. I would like to have 2 or 3 days worth ready at a time. Any secrets?

I think most veggies can be frozen.
So chop them up and put some in a freezer bag (raw) and just defrost when you need them.0 -
also try keep a papertowel in the container or bag, tends to absorb any extra liquid.0

I keep carrots and celery in a plastic ice cream tub full of water in the fridge.0

Put some paper towel in the bag / tupperware with them. Works like a champ!0

I second the recommendation for water. I keep carrots and celery chopped all the time, each in their own container, covered with water I change every day. It works perfectly!0

The paper towel idea works really good, especially with fresh mushrooms ( wrap completely). Every Sunday I chop up mushroom, peppers and onions and put in separate containers, because I use a lot of these for cooking and quick omelets. It sure saves time during the week and clean up is only once a week. So Handy.0
