Cod

Anything I can do to liven up a cod dish? I love spices and experimenting, open to your suggestions :)

  • I went to the Dr. this week for my annual show and tell and while I was waiting on the Dr.found this recipe in some Diabetes magazine. I have not tried it yet, but plan on having it next week.

    Coating:

    1/4 cup white whole wheat flour
    1/4 tsp. kosher salt
    1/4 tp. ground black pepper

    Batter:

    2 eggs, beaten
    1-1/2 Tbsp. reduced fat mayonnaise
    1/4 tsp. cayenne pepper or hot sauce

    Crumbs:

    3/4 cup panko bread crumbs
    2 Tbsp. finely minced parsley

    Preheat the oven to 425 degrees. Coat a wire rack (cooling rack) wih Pam. Set the wire rack on a baking sheet. Set aside. On plate combine the coating ingredients.

    In a medium sized bowl, mis the ingredients for th batter.

    On a plate, combine the crumb ingredients.

    Dredge both sides ofeach fish fillet in the flour mixture. Dip each piece of fish into the batter. The coat bot6h sides of each fillet with the panko crumb mixture.

    Place the fish fillets on the prepared wire rack on the baking sheet. Bake the fish for about 25 minutes or until golden brown and cooked through.

    We love cod and flounder, so here is my go to.

    First is the puree.
    1/4lb per person of Parsnips or Carrotts. Steem or boil untill tender. In a food pro add no fat cream cheese and a bit of low fat butter. Salt and Pepper. Take it for a spin untill compleatly smooth.

    The fish.
    In a nonstick pan with a light olive oil sear one side of the fish. Flip. Put a nice amount a TBS or so of a good quality pesto or make your own on top and as the other side sears it will pull that pesto into it.

    Put a nice amount of the puree doun on the plate, pesto fish on top. Try it and it will become a go to for you I am sure. I usually have a vegatable salad of some sort on the side.

    This is going to sound weird but I love it! Take a baking dish and put some frank's hot sauce in it. Place a piece of captain's cut cod on top of it. In a pan cook chopped onions, wet crushed red pepper, and parsley. Take some chopped frozen spinach and place it on and around the cod, add the onion mixture on top of the spinach and fish. Cook at 350 until fish it cooked. So yummy! Also, you can add some cheese on top of the mixture.
