Berry Orange Nut Protein Bran Muffins

I borrowed a recipe from online for basic bran muffins and added protein and dried fruit/nuts to make them hearty and yummy!

Here's the recipe and nutrition info, makes 6 muffins. (I ate two for breakfast this morning, that's why there are only 4 pictured) :bigsmile:


- 3 large egg whites
- 1/4 cup nonfat greek yogurt, plain
- 2 scoops EAS 100% whey vanilla
- 3/4 cup wheat bran
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 packets stevia in the raw
- 1 tsp vanilla extract
- 1/2 tsp orange extract
- 1 pinch table salt
- 1/3 cup dried cranberries, sweetened
- 1/3 cup sliced almonds
- 1/4 cup seedless raisins
- 1/4 cup chopped walnuts


Preheat oven to 350 degrees. Combine ingredients and mix well. Spray or add liners to muffin tin. Fill tins to top with mixture and bake for 15 min. Enjoy!


Calories per serving (1 muffin): 186
Protein: 14g
Fat: 7g
Carb: 21g
Fiber: 5g

    UPDATE

    These got really hard the next day and stuck to the liners. I think they need a little more liquid so they'll be more chewy. Trying them today with added unsweetened applesauce and maybe subbing half the bran with oat flour.
