Sweet Potato Chips Breaded Fish or Chicken

I had some Sweet Potato Chips ( Terra Brand, no salt added and a full serving of vegetables) I used it as a breading for 4 oz of fish fillet, I used founder, but think it would work on different types. I processed the chips in my food processer to make a fine bread crumb, coated the fish with egg whites and then tossed into chip crumbs. It was fantastic. I am going to try on chicken tenderloins.
