Zucchini & buttermilk pancakes - LOW FAT

Here's another tryout recipe I just did (and they're delicious!)

Ingredients:

1 zucchini grated
2 large eggs
1 cup all purpose flour
1 tsp baking soda
1x 1/4 cup low fat buttermilk
1 tbsp olive oil
1 pinch of salt
1 tsp vanilla extract

Start by grating the zucchini. In a bowl put the eggs, the buttermilk, the vanilla extract and the olive oil and stir it with the zucchini shreds. In another bowl, whisk the flour, the salt and the baking soda and then stir it with the zucchini batter you did previously and mix it all together until combined.

Then use a non stick pan to make the pancakes. I've used some drops of coconut oil, but some drops of olive oil or cooking spray should be fine as well.
Then just scoop the mix into the pan and cook it as you usually cook your pancakes.
