Healthy Chicken Fajitas

Here's a super easy, healthy chicken fajita recipe that I followed the other day. Personally, I left out the garlic, cumin and cilantro and it was so good!

6oz Boneless, Skinless Chicken Breast
Olive Oil (2 TB)
Onion (sliced lengthwise)
Bell Peppers (sliced slender & lengthwise)
Minced Garlic
Spices:

TB Olive Oil
tsp Lime Juice
Pinch Sea Salt
Cumin (to taste)
tsp Chili Powder
Chopped Cilantro (to taste)
Jalapeño (to taste)
Directions:

Cut veggies and thinly slice chicken breast. Mix “Spice” ingredients in a bowl. Add chicken breast to spice bowl (make sure to coat chicken with the mixture). Marinate for 1 hour. Heat skillets and add oil, chicken & veggies (garlic went in both skillets). Flip & stir occasionally until chicken is finished cooking and veggies have softened.

Serve with guacamole, salsa & greek yogurt (greek yogurt can be used like sour cream!) or serve on whole wheat tortillas. It’s also great on it’s own. ENJOY! =)
