67 calorie cakes (kinda bready)

28 servings (obviously could be bigger servings)
250g yoghurt - any flavour but I used low fat natural yoghurt
3 eggs
125ml unsweetened apple sauce
6 tablespoons sugar substitute (SPLENDA or similar)
400g self-raising flour
Whisk 3 eggs and set aside.
Empty the yoghurt into a big bowl and add the applesauce, sugar substitute and flour.
Pour over the eggs and whisk the mixture.
Divide into cupcake cases or 2 loaf tins
Bake in oven at 150°C for 20 - 30 minutes.
I just made these and I think they're rather tasty. Not the most flavoursome but they might be stronger with strawberry yoghurt or similar.
