Microwave omelette...

I've received a lot of good advice from these forums and found some new things I love to eat, like using greek yogurt in place of mayo and sour cream, but this....

I made a 'microwave' omelette this morning. 2 whole eggs, tomatos, onions, shredded cheese in a square bowl for a sammach. I'm not sure what was supposed to happen but the texture of what came out of my microwave was NOT eggs. It was more like what comes on one of those frozen breakfast sandwiches.

Is that normal, or is there a way to make them more like an omelette and less like a yellow spongy mass?

    I cook my eggs (scrambled) in the microwave all the time. If you just cook egg (not scrambled with anything else) it will poof up. I put mushrooms, spinach, cheese etc into my eggs. I nuke till I see it poofing up, take out, chop it up, stir, and nuke till I see it poofing again. Usually as soon as I take it out of microwave it unpoofs. I can not make an omelet in the microwave though.

    if your looking to save time in the morning, or want to be able to have at work with no access to a stove.. why don't you try pre-cooking it and reheating? I've done that before and it works well..
