Springing Forward to Better Eating

740 Calories in my husband’s 1 Totino’s Pepperoni Party Pizza, not to mention the can of Mt. Dew that he consumed. Of course, that would’ve been me, too, before January 7, 2013.

I, in turn, made a meal for myself and my teenage daughter that makes me very proud to have made the recent healthy changes to my lifestyle and set a more positive example for her (especially since she is such a competitive athlete).
Our meal came to 629 calories each, including our drinks, and looked like this:

Wheat crackers with Beer & Cheese soup mix dip, citrus Herb Salmon Filet on a bed of lemon-spritzed baby spinach and arugula, broiled eggplant with olive oil, garlic and crushed red pepper, cream cheese stuffed mushrooms with Parmesan cheese and cayenne, 24 oz. bottle of water with The Greens.

I can’t believe this is the way I eat now, but I’m incredibly proud of myself. The adjustments are showing in my weight as well as my most recent medical tests. This is a fantastic feeling!!!

    Good job! Proud of ya. I know it can be difficult to make the change when your tastesbuds are so used to all the sugar, salt and fat. Keep goin!
