I just tossed this together tonight. Hope you enjoy it!

1 Mama Lupe's Fresh Tortilla (whole wheat, low-carb, low-fat, no hydrogenated oils)
1 slice Sargento red. sodium provolone cheese
1 oz. sliced portabello mushrooms
1/4 c. black beans (rinsed)
2 Tbsp. El Pinto All Natural Salsa (chipotle medium)

Assemble all ingredients, except for the salsa, in the middle of the tortilla shell and put it in the microwave for 1 minute. Top with the salsa, roll it up and enjoy!

Calories: 203, Carbs: 21g, Fiber: 9g, Protein: 15g, Fat: 9g, Sodium: 727mg*

*The actual amount of sodium will be less considering the beans have been rinsed, but the amount above reflects the beans without being rinsed.

If you can't find the exact brands I used in your local grocery store, you can try to find something similar.
