Fellow Vegetarians & Vegans Unite!!!

Have been a vegetarian myself for nearly 10 years now but I've definitely noticed that I am not getting enough protein in my diet among other things too much sugar etc., etc. sooooooo I wanna know what do my fellow vegetarian or vegan peers eat in a typical day? Hopefully this will help me incorporate better eating into my diet. Does anyone else out there feel they eat weird? Please let me know...

    I track my protein in MFP, and exceed the minimum requirement most days. I *love* soy milk, and I love beans and rice combinations, especially hummus on rice cakes (which, as I'm sure you know, is a complete protein). I occasionally get some from nuts and lentil soup...hope this all helps.

    Lately I have been baking extra firm tofu with lots of diced onions and garlic, and a teaspoon of olive oil. Delicious. And it has a LOT of protein, and really no bad stuff.

    Good luck! I'll be watching this thread, too, because I'm always looking for ways to change things up.

    Tofu is one of man's greatest inventions. I love the taste (in recipes), the consistency, and it is so nutritious!!

    I also *love* me some soy milk prefferably vanilla, and I haven't had hummus in a while which is odd I guess I forgot about it haha, so yea I should definitely start eating that again, and you're right it is a great protein source! Thanks

    Yeee wish I could say the same but I am definitely NOT a tofu fan! Weird I know coming from a veggie n all.

    Vegetarian 4 years... food diary is open. I do limit my soy – I will eat tofu and tempeh but skip the soy milk in favor of flax milk (Good Karma brand is now making a protein enriched version). I have no issues with gluten so I lean toward the seitan products for protein – I love, love, love Upton's Naturals and Field Roast. I also make a mean puff-pastry wrapped seitan roast at Thanksgiving, not to brag. :wink: Not vegan, though, so dairy and eggs are also part of my protein regimen.

    I actually decided to add a couple animal foods like cottage cheese & greek yogurt recently to up my protein & didn't want to add meat. I was eating 55c/30f/15p & now 45c/30f/25p & happy with that.

    Per calorie there is way more protein in green leafy vegetables then in meat.
