    omg... if this taste like a good cheesecake, you have become my new bestest ever forever friend in the whole wide world. Sorry, I don't even know you. Let's just say, cheesecake is my number one dessert!!! Didn't mean to go overboard. :laugh: I can't wait to try it.

    I've made it. It's not bad... definitely not as good as a real cheesecake.
    I can second this without making it…even with the full fat cream cheese which i would prefer over the fat free..if anything at least 1/3 fat cream cheese, fat free is nothing but a chemical s*&^% storm with a gross after taste >.< Give me real cheese cake :)

    I use crushed almonds in a big gallon ziplock bag for the crust.

    I had a different recipe for pumpkin cheese cake that's pretty good, low carb, not really high protein.

    2 (small) packages sugar free fat free instant Cheesecake Jell-O Pudding Mix
    2 cups skim OR almond milk
    1 15oz pumpkin puree (not the spiced one, just plain)
    1 8 oz fat free / sugar free cool whip
    Pumpkin pie spice to taste.

    Mix pudding mix and milk until pudding consistency, and then fold in remaining ingredients.

    This makes about half cup servings for 65 cals each if using skim milk.

    Taste just like the filling of a pumpkin pie!

    When I am really lazy, I mix half cup each of cottage cheese, plain pumpkin puree, and cinnamon for a treat.

    I know what I'm making next weekend for snacks all week. Will probably have to do 2 and will probably use regular cream cheese. I don't do low fat since they typically up the sugar in the items to make up for the fat. I'll let you know how it turns out. Thanks for this recipe!
