Are there benefits to eating egg yolks?

If so, do the benefits outweigh the unhealty aspects of the contents of cholesterol and fats?

I ask because I recently learned that although I'm quite healthy and fit, and although no one notices except myself, I wish to gradually lose approximately 5 pounds over the next 6-12 months.

At my age, height, weight, and physical activity, it's recommended that I not consume more than 2100 calaries per day to maintain my current weight and approximately 1740 cal/day to lose 1/4-pound per week.

There's a vietnamese place close to my office that sells three (3) hard-boiled eggs for $1 (or 40-cents each). I've been buying them, eating the egg-whites, and throwing the shells and yolks into the compost bin.

An egg white contains approximately 15 to 17 calories.

A yolk contains approximately 54 to 59 calories.

One thought I'm having is to consume just one egg yolk out of the three hard-boiled eggs I buy.

Hence, another question might be:

Is it reasonable to consume one egg yolk?

    That's exactly what I was going to suggest. It's what I do. There are benefits to eating the yolk, but there's also more fat and calories. I eat three scrambled eggs every morning, minus two of the yolks. I feel like I get the best of both worlds.

    Fat tastes good and can be satiating. Yolks from free range chickens (or those fed an enriched diet) can be a good source of omega-3 fatty acids and vitamins. I wouldn't cut them out completely. Egg whites, by themselves, just don't quite do it for me.

    I met with a trainer at the gym last fall. He asked my about my diet. I told him that I had an egg white omelet with spinach or tomato every morning. He said it sounded great but questioned why I didn't eat the egg yolks. I thought I shouldn't because of cholesterol and fat.

    Turns out it's good to eat the yolks. I agree with earlier statements about maybe eating only one or two of the yolks instead of all three. This trainer/nutritionist encouraged me to buy organic, cage-free eggs with omega 3. I always thought an egg was just an egg. Not true!!! It's so worth it to spend the few extra dollars on the extra special eggs. They're so much better!!!
